But what the hell is jump-cancelling, or whatever it's called? Is there anything else interesting one could do with the mage?

Jump canceling is a technique that can be used by mages, warriors, and scouts, although it is most noticeable when used by mages. After pressing (or holding) R2 the only move you can do is jump. If you do jump it interrupts the animation of whatever it is you were doing, and allows you to do anything you want when you land.
For mages, jump canceling manifests itself in a lightning followed by a jump to stop the slow walk animation that comes after you fire a bolt. This is useful because it increases mobility (making the mage less vulnerable to being punished) and decreases the lag from lightning (shortening it to the time it takes to land from the jump, thus allowing you to do another move sooner).
For warriors and scouts jump canceling is used when throwing the axe or satchel bomb is no longer desired. By jumping the ready axe/grab satchel bomb animation is cut off and the axe/satchel bomb is not thrown (instead it remains charged and ready). This restores mobility as well as saves the axe/satchel bomb from being wasted and having to wait for it to recharge.
And there are no other glitches for the mage class. There are some potentially useful warrior axe glitches (you can move at sprint speed while holding your axe ready), as well as some not very practical but really funny scout backstab glitches (usually used to gain access to otherwise blocked off areas of the map).

Ohhhh. THAT thing. I did it all the time, primarily to dodge lightning bolts/archers, as well as scouts. Never thought it makes me shoot the lightning faster. Thanks for clarifying that up.

JC'd (jump canceled) lightning is 1.5x faster than regular lightning.
